Nothing is ever prepared over night, All food are pre- seasoned & cooked on the same day as the event.
My Jamaican cooking experience at age eight; Taught by my Grand Mother Elizabeth Blake and my Aunt Ethlyn in Linstead. My grandmother would call us in the kitchen to watch when ever she was cooking. My Jamaican style cooking training continued when I went to London to Join my Parents. My mother was an expert on Cake, Patties and food. I learnt the art of seasoning from my Mother especially Chicken, Curry Motton – Curry Goat and Fresh Fish. My Mother cooked for large functions, Conventions, Weddings etc, I would always be there in the Kitchen.
DIFFERENT COOKING STYLE
London 1965 Secondary School Food Technology / Cookery Classes were essential. Life Skills’ .Every School Taught their students to cook. Part of that class each week we had to wash a shirt a Blouse or our apron. We also had to Iron our uniform.
Growing up in London we all had new experience where food were concerned. We had to cook in School’ It was essential. Our Teachers were surprised at the way we did things so well . ‘Of course they did not realized that we had to learn from a very young age. What ever we were doing we were at the top in class, Teachers were amazed how well we could Iron our clothes .
The kind of meals were much easier than Caribbean Dishes.” We learnt easy things such as Sausage Rolls, Apple turnover, Cheese & Onion Pie, Cornish Pasties, Cakes and Shepherd Pie. We were Taught the British way not much seasoning, Plain Roast Potato’s Lamb Chops etc…
COOKING IS ART:Not to be rushed.
In my Teenage years I would cook for others who paid me well so I continues right through. Coming from a large family where food played a big part when we get together.
The largest amount of people I had catered for were seven hundred, ‘ I cater for family weddings: Anniversaries Birthday Celebrations: Indoor and out door events etc.
